Many times, I've had leftover mashed potatoes and wondered what to do with them. This recipe solves that dilemma for me. I hope you enjoy it as much as my family does.

Mashed Potato Pancakes
2 C. Cold Mashed Potatoes
1 Large Eggs
1/4 C. Plus 1 T. All Purpose Flour
1/8 t. Garlic Powder to taste
1/8 t. Salt or to taste
1/8t. Black Pepper or to taste
1-2 T. Green Onion or 1 T. Yellow Onion or 1 t. Dried Chives
1/2 C. Grated Sharp Cheese, or whatever cheese you like
3-4 T. Vegetale Oil for frying
If using 3 C. Mashed Potatoes use 2 Eggs,1/3 C. Flour, 3/4 C. Cheese, adjust seasoning and onion accordingly.
