Hamburger Steak (2 Servings)

1 Lb Ground Beef
1 Cup Beef Stock
1/4 Cup Heavy Cream
1/4 tsp Garlic Powder
Salt and Pepper to Taste

1) Pre heat your oven to 350°F. Patty your burgers as you would any other hamburger but make it a bit thicker. Place and indentation in the middle of it with your thumb. Season generously with salt and pepper.
2) Sear the patty in a heavy bottom and oven safe pan over medium high heat for about 4 minutes per side.
3) Once seared, place the pan into the oven and cook to desired temperature. I went with medium (140°F).
4) After the meat is cooked, remove from the pan and let it rest.
5) Drain the grease from the pan and place the pan back onto the burner. Turn the heat to medium and add the beef stock. Bring to a simmer and reduce by half. Once reduced, add the cream and garlic powder. Reduce until the sauce is thick enough to coat the back of a spoon. Taste for seasoning.
6) Place the patty and top with your sauce.

Beef Muffins (4 Servings)

12 oz Ground Beef
2 tsp Salt (or favorite burger seasoning)
Cream Cheese Filling (2 servings)
2 oz Cream Cheese
2 Tbsp Chopped Jalapeno
Bacon and Mushroom Filling (2 Servings)
2 Strips Thick Cut Bacon
3-4 White Mushrooms
Salt and Pepper to Taste

1) Get a muffin tin and season the bottom of 4 of the muffin holes with a little salt and pepper.
2) Place 3 oz of ground beef to the muffin tin and spread it out to make a beefy receptacle. Season the top with salt and pepper. Place into an oven at 350° F for about 20 minutes.
3) For the cream cheese filling, combine the diced jalapeno and cream cheese until homogenous.
4) For the bacon and mushroom filling, dice the mushrooms and the bacon. Add them both to a pan set over medium high heat with a pinch of salt. Once the bacon is done to your liking and the mushrooms have a nice golden color, remove and drain on a paper towel.
5) Fill muffin holes to hearts desire.

Tex-Mex Breakfast Skillet

4 Strips Thick Cut Bacon, Diced
1 Lb Ground Beef
3 Tbsp Green Onions, Slice (Optional)
1 1/2 Cups Beef Stock
3 Eggs
1/2 Cup Shredded Cheddar
1/2 Avocado

Simple Taco Seasoning
1 tsp Salt
1/4 tsp Paprika
1/4 tsp Garlic Powder
1/2 tsp Onion Powder
1/4 tsp Cumin
1/8 tsp Black Pepper

1) Add the bacon to a pan set to medium high heat and cook until crispy. Remove from the pan reserving the bacon grease.
2) Add all of the ground beef to your pan and cook moving constantly with a spatula until browned. Drain the beef fat. Reduce the heat to medium and add 2 tsp of your taco seasoning. Cook for about 2 minute to toast the spices. Add 2 Tbsp of the green onions and combine.
3) Reduce the heat to low and add in the beef stock and bring to a simmer. Once simmering, make 3 weeks into the beef and crack the eggs into them. Cover with a lid and cook for 4-6 minutes or until the egg whites are set. Remove from the heat.
4) To the pan, top with your cooked bacon, cheddar, sliced avocado, remaining green onions, and a light sprinkling of the taco seasoning.

Flying Dutchman

12 oz Ground Beef
4 Slices American Cheese
Salt and Pepper to taste

1) Portion out 3 oz balls of your ground beef.
2) Set a griddle to medium high heat (or heavy bottom pan). Place a meatball onto your griddle and top with some of your salt and pepper. Smash this down with a large spatula and another sturdy utensil to keep even pressure until the burger is about 1/4 inch thick. Let this cook on one side for 2-3 minutes or until you can see the crust start to form on the burger. Give this a flip and season the other side with a little more salt and pepper.
3) Top your patty with american cheese and let it melt for about 1 minute. Remove from the pan and flip another cheesed patty on top of another to complete the flying dutchman.

Pizza Meatballs
11 Oz Ground Beef
5 Oz Pepperoni
3 Oz Black Olives, drained (Optional)
1/4 tsp Salt
1/4 tsp Garlic Powder
2 Oz Low Moisture Mozzarella, Cubed

Simple Meatloaf

6 Tbsp Ground Pork Rinds
2 Lb Ground Beef
1 1/2 Tbsp Steak Seasoning
1 tsp Parsley Flakes (Optional)
