Not everyone likes fruitcake but I have the perfect solution. This cake is different and delicious with an old charm of a fruitcake. After some research I found that this cake dates back to the early 1900's. Eaten with a cup of coffee or some creamy eggnog makes a fabulous Christmas treat. The cake tastes similar to a spice or applesauce cake. The gumdrops give a sweet chewy bite and the crunch of the nuts add a bit of texture. Definitely going to be making this again! I think this cake would also make a great gift!


Gumdrop Cake

Ingredients
2 cups gumdrops
1 cup shortening
1 cup sugar
2 eggs
1 1/2 cups unsweetened applesauce
1 tsp cinnamon
1/2 tsp cloves
1 tsp salt
1 tsp baking soda
1 Tbsp hot water
1 cup light or dark raisins
1 cup chopped nuts
4 cups flour

Instructions
1. Preheat oven to 300 degrees. Dissolve baking soda in 1Tbsp hot water.
2. Cream butter and sugar in a large mixing bowl.
3. Add applesauce, dissolved baking soda and eggs.
4. Add 3 cups flour, cinnamon, cloves, and salt.
5. Mix nuts, raisins, and gumdrops in a separate bowl and sift remaining 1 cup of flour over mixture, stirring making sure everything is coated. Add to creamed mixture.
6. Grease and flour a tube pan or bundt pan. Pour batter into pan and bake 2 hours.

Tip: I baked this cake for 1 hour and 50 minutes, you will want to check after 1 and half hours because some ovens cook differently.
If I make again I think I would increase the applesauce to 2 cups. The cake was a little dry.
