Prepare the Poha: Wash the poha thoroughly and drain the water. Let it sit for about 10 minutes to soften. Mix Ingredients: In a mixing bowl, combine the softened poha with yogurt, green chilies, ginger, rice flour, curry leaves, coriander leaves, grated carrot (if using), and salt. Mix well to form a dough-like consistency. If the mixture is too dry, add a little water.
Shape the Vadai: Grease your hands with a little oil and take a small portion of the dough. Flatten it to form a patty shape.Fry the Vadai: Heat oil in a pan over medium heat. Once hot, carefully slide the shaped vadai into the oil and fry until they are golden brown and crispy.
Serve: Remove the vadai from the oil and place them on paper towels to drain excess oil. Serve hot with chutney or ketchup.
