I highly recommend using a TECHNIQUE class such as Tails for all of the challenges because they have great handling for drifting. Most challenges I used mods to simply increase the vehicles speed and would sometimes remove them to slow down the vehicle if I was having troubles with a particular challenge.

The key is to familiarize yourself with the tracks and drifting the rest is just practice. Most of these were taking me on average of about 20-25 minutes each to familiarize myself with the challenge and find and execute the best route. Some of the Ring Challenges were a little trickier and took me 45-60 minutes to complete.
