Traditional Wet Coconut Rawa Ladoo Recipe | Sooji Ladoo | पाका-तले ओल्या नारळाचे रवा लाडू | Maharashtrian Diwali Faral :

Diwali celebration is incomplete without sweets and it adds more charm to the celebration with any home made Diwali dish. So here's this mouth watering, melt in mouth Rava Coconut Laddu recipe. It does need little preparation but its all worth it!

Ingredients:

1 cup Semolina / sooji ( thick or 1/2 cup thin & 1/2 cup thick),
1/2 cup of Pure Ghee,
1/2 cup of Fresh Wet Scraped Coconut,(Dry desiccated Coconut can be used),
Dry Fruits- Chironji, Raisins, chopped- Almonds, Cashews, Pistachio.
1/2 cup Sugar ( add less or more as per liking),
Water,
1 tsp. Cardamom Powder,
1/2 tsp. Nutmeg Powder,
Saffron Threads.

Recipe:

Heat a pan. Add Pure ghee and roast semolina in a pure ghee till it becomes golden pink on low flame. It takes around 7 to 8 minutes.
Once semolina is golden pink, add wet Scraped Coconut and saute for 30 to 1 minute.
Then add Dry fruits of your choice.and saute for 30 seconds on low flame.
Keep it aside.

Sugar Syrup:

Now take sugar in to pan, add water to that, bring that to boil over high heat.(Do not add excess water )
After it comes to a boil, lower the heat down and cook the syrup for 4 to 5 minutes or until it gets little thick or close to single thread consistency.
Then add Cardamom powder, nutmeg powder (optional), and saffron threads.let it boil for 30 seconds. Off the flame.
Now mix roasted semolina and sugar syrup. Mix well.
Cover and rest ladoo mixture for about 1 & 1/2 hour.
Then roll the ladoo. ( if sugar syrup is raw, & unable to roll the ladoo, then cook the ladoo mixture in microwave for about 5-7 minutes.)
Rawa Ladoo’s are ready to serve.
