Dark CHOCOLATE–ORANGE SALAMI

INGREDIENTS

BASE:
125 g (4.4 oz) dark chocolate
10 g (0.35 oz) butter
Zest of orange
Pinch of salt
1 egg
50 g (1.8 oz) sugar
10 ml (2/3 tbsp / 0.3 fl oz) rum (optional)

MIX-INS:
100 g (3.5 oz) cookies, crushed into medium pieces
30 g (1 oz) dried cranberries, softened in hot water
30 g (1 oz) toasted hazelnuts

FOR FINISHING:
Powdered sugar
Kitchen twine
Parchment paper

INSTRUCTIONS

1. Prepare the cranberries
Place dried cranberries in a bowl, cover with hot water, and let soften for a few minutes. Drain.

2. Make the egg mixture
In a bowl, whisk together 1 egg and 50 g (1.8 oz) sugar. Set aside.

3. Melt the chocolate
In a heatproof bowl, combine dark chocolate, butter, salt, and orangeo zest.
Place over a pot of simmering water and melt gently, stirring until smooth.

4. Cook the mixture
Pour the egg mixture into the melted chocolate.
Stir constantly over the water bath until the mixture reaches 75°C (167°F).
Remove from heat and add rum if using.

5. Combine
In a large bowl, mix crushed cookies, softened cranberries, and hazelnuts.
Pour the warm chocolate mixture over and stir until fully combined.

6. Shape the salami
Transfer the mixture onto plastic wrap.
Shape into a log and wrap tightly.
Refrigerate for 3–4 hours, until firm.

7. Finish
Roll the chilled log in powdered sugar.
Wrap with kitchen twine to mimic real salami.
Place on parchment, wrap like a candy, twist and tie the ends.
Add a label if gifting.

8. Serve
Slice and enjoy — or gift it (if you somehow resist eating it yourself).
