Abstract:
Milk is an amazing material that sustains and develops most of us in our most critical time of life after birth. It provides all the nutrition and energy needs for a baby. We know a lot about milk as a liquid before we consume it, but very little about what happens when it is being digested by our body. We have been using advanced techniques as large scale research facilities for some time to better understand the behaviour of milk once it is in the body and being digested, and it emerges that milk and milk-like systems undergo very interesting structural changes, as well as having strong potential for helping to improve the effectiveness of life-saving medicines for children and adults alike
