ENNAI KATHARIKAI KULAMBU

INGREDIENTS:
MASALA PASTE PREPARATION:
Onion - 2 (medium)
Tomatoes - 2 (medium)
Rock salt - 2 tsp
Turmeric powder - ¼ tsp
Kulambu milagai thool - 2 tbsp (homemade chilli powder)
Grated coconut - ½ cup
Tamarind water - 1 cup

FRYING BRINJAL & GRAVY PREPARATION:
Gingelly oil - 1 tsp + 4 tbsp
Brinjal - 6 no
Mustard - 1 tsp
Fenugreek - a pinch
Shallots - ½ cup
Garlic - 5 to 6
Curry leaves
Salt - to taste
Water - as required

NOTE:
Grind the masala to fine paste
Fry the brinjal till it changes colour
Cook the masala, till oil separates
If needed, add jaggery at the end which balance the taste of the dish
Cook the gravy for atleast 30 to 45 min to achieve proper texture
