In this What I Eat in a Day video, I’m sharing some of my favorite easy, healthy, and high-protein meals that keep me feeling full and energized throughout the day and help me achieve my protein goal of 100G+ protein! 🍳💪 Plus, I’m testing some of the most viral drink recipes from social media — including the tiramisu latte, iced strawberry matcha, and the creme brûlée latte 🍓☕✨

Iced Tiramisu Latte
1 shot espresso
3/4 cup milk (180 ml)
optional: 2 tablespoon vanilla protein powder
ice

cold foam:
4 tablespoons milk
2 tablespoons whipping cream
1 tablespoon mascarpone
1 teaspoon maple syrup
1/2 teaspoon vanilla extract

cacao powder for topping


Iced Strawberry Matcha Latte
3-4g (1 1/2 teaspoon) matcha
30 ml hot water

ice
1/3 cup milk (80 ml)

for the strawberry foam:
4 tablespoons whipping cream,
3 tablespoons milk
3 teaspoons freeze dried strawberry powder
1 teaspoon maple syrup
1/2 teaspoon vanilla

Iced Creme Brulée Latte
1 shot of espresso
ice
3/4 cup milk (180 ml)
1 teaspoon vanilla extract
1 teaspoon maple syrup

caramel cold foam:
3 tablespoons whipping cream
3 tablespoons milk
2 teaspoons caramel sauce

topping:
1 teaspoon sugar


Pesto Eggs
4 eggs
2 tablespoons pesto
pinch of salt

optional garnish: fresh basil

1. Spread the pesto to a pan
2. Crack the eggs into the pan
3. Season with salt. Cook for a bout 5 minutes on medium heat
4. Serve with your favorite bread


Chicken & Goat Cheese Salad
chicken breasts, marinated in olive oil, oregano, chili flakes, salt & pepper
goat cheese, sliced
arugula
cucumber
grapes
pine nuts

dressing for two:
2 tablespoons olive oil
juice of 1/2 lemon
2 teaspoon dijon mustard
pinch of salt

1. Cook the chicken breasts on a pan, for about 5-7 minutes per side with the lid.
2. Meanwhile wash and chop the vegetables and mix all the ingredients together for the dressing
3. Fry the goat cheese slices with olive oil for a few minutes on both sides
4. Build the salad and enjoy!

One Pot Lasagna

This makes about 4 servings:
1 zucchini
14 oz. / 400g lean ground beef
6 chopped green onions (add onion and garlic to this if you don’t have IBS, and cook them with the beef)
Salt & pepper, to taste
2 tablespoons dried basil
2 tablespoons oregano
Pinch of chili flakes
14 oz. / 400g crushed tomatoes
4 tablespoons tomato paste
3 cups vegetable stock (600 ml)
8 uncooked (gluten-free) lasagna noodle sheets

For the white sauce:
200g cottage cheese
4 tablespoons milk

for topping:
100g shredded parmesan
fresh basil

1. First add the ingredients for the white sauce into a blender and mix until creamy
2. Cook the zucchini for about 5 minutes (if you don’t have IBS, you could cook a chopped onion at this point too), add the ground beef and when it’s almost cooked add the green onions (or garlic if you don’t have IBS), season with salt, pepper, oregano, basil and chili flakes
3. Add the crushed tomatoes, tomato paste and stock and stir. Break the lasagna noodles into the pan and make sure they are covered in the liquid. Cover with a lid and let simmer for 20-25 minutes. Make sure that the noodles are cooked
4. Add the white sauce and parmesan on top, cover with the lid until the cheese melt
5. Serve with fresh basil and enjoy!


Hot Chocolate

2 pieces dark chocolate, I used 70% dark chocolate
1/2 cup milk (120 ml)
2 teaspoon unsweetened cacao powder
optional: 1-2 teaspoons maple syrup

for the foam:
4 tablespoons milk
1 teaspoon maple syrup/honey
1/2 teaspoon cacao powder
