Persian Barberry Rice with Chicken (Zereshk Polo Ba Morgh)


Ingredients:
5 cup basmati rice
Saffron
Dried Barberries
Pinch of Sugar
Butter

Chicken any cut 1 kilo
sliced onion
minced garlic
freshly rushed grind tomatoes
Tomato paste
turmeric powder
Coriander powder
Paprika
chili powder
Cooking oil
Salt/pepper to taste

Wash basmati rice until clear and soak in water for at least 30 mins to 1 hour.

Grind saffron with pinch of sugar with a mortar and pestle, add it to 5 tablespoons of hot water and set it aside to bloom.

Clean and wash barberries and set aside.

Season Chicken with Salt and Pepper, Pan Fried the chicken on both sides in a little oil until it is just golden in color then set aside.

In the same pan, sauté onion and garlic, add 1 tablespoon of tomato paste and the freshly crushed tomatoes and half of the saffron water. Add 1 tablespoon paprika, turmeric and coriander powder. A little chili powder, salt and pepper to taste and . Add back the chicken. Cook it on low heat till becomes tender.

Bring water to a boil add 1 tablespoon of salt, add the basmati rice until it is 80% cooked about 5 to 8 minutes.

Strain the rice and wash with water.

In a pot, put a little oil and water, add the rice, make holes on the rice. Place a kitchen/paper tower before covering the lid, cook it on low heat until done.

In a pan, cook the barberries with butter and a little sugar.

Take a cup of rice on a bowl, add inn the saffron water and the buttered barberries.

Serve on a plate the plain rice top with the barberry rice and chicken on the side.

Enjoy while it is hot.
