Here are the recipes…

🍔🌮CHEESEBURGER TACOS🌮🍔

INGREDIENTS:
3 pounds ground beef
garlic powder (to taste)
salt & pepper (to taste)
¼ cup fat of choice
1 pound jalapeno jack cheese (sliced)
40-50 small flour tortillas

TOPPINGS:
ketchup
mustard
mayonnaise
onions
lettuce
caramelized onions
pickled jalapenos
pickled onions
zucchini relish

INSTRUCTIONS:
1. preheat skillet/griddle on grill or cooktop to high
2. form ground beef into THICK burger patties
3. season burger patties with garlic powder, salt, & pepper
4. prep toppings if you haven’t yet
5. coat skillet/griddle with generous amount of fat/oil
6. cook burgers 2-4 minutes until crust has formed on the bottom
7. flip and cook another 1-3 minutes
8. use your spatula to chop up the burgers into large chunks about 1 inch in size
9. re-season with more salt & pepper and top with cheese
10. cook till your preferred doneness
11. remove burgers and cover to keep warm
12. assemble tacos to your liking


🌾🌾WHOLE GRAIN FLOUR TORTILLAS🌾🌾

INGREDIENTS:
2 cups soft white wheat berries
2 tsp salt
½ tsp baking powder
1/3 cup lard
1 cup water (hot)

INSTRUCTIONS:
1. grind the wheat berries and use all the flour that is produced
2. mix flour, baking powder, and salt together
3. cut lard into flour using a pastry cutter
4. add hot water slowly and mix together until dough comes together
5. knead for 3-5 minutes
6. roll dough into 24 balls, 30 grams each to make 4 inch tortillas
7. cover with plastic wrap and let rest for 30 minutes – 2 hours
8. preheat cast iron skillet or griddle
9. roll out tortillas as thin as you can on floured surface
10. in batches, cook on skillet or griddle for about 20 seconds each side – flipping when bubbles form
11. place on a plate or a towel lined basket and cover to keep warm
