Beef Kala Bhuna" is a delicious Bangladeshi dish made with beef and a rich, spicy gravy. Here are the details for preparing Beef Kala Bhuna:
Ingredients:
For the Marinade:
1000 grams of beef, preferably with bones, cut into small pieces
1 teaspoon turmeric powder
1 teaspoon red chili powder
Salt to taste
2 tablespoons yogurt
For the Bhuna Masala (Spice Mix):
2 medium-sized onions, finely sliced
2-3 cloves of garlic, minced
1-inch piece of ginger, minced
2-3 green chilies, chopped (adjust to your spice preference)
1/2 cup tomato, finely chopped
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon garam masala powder
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to your spice preference)
Salt to taste
Cooking oil
Fresh coriander leaves for garnish
Instructions:
Marinating the Beef:
In a mixing bowl, combine the beef pieces with turmeric powder, red chili powder, salt, and yogurt. Make sure the beef pieces are well coated. Let it marinate for at least 30 minutes or longer in the refrigerator.
Cooking the Beef:
Heat oil in a heavy-bottomed pan or pressure cooker over medium heat.
Add the marinated beef and cook until it changes color and is sealed. This should take about 5-7 minutes.
Remove the beef from the pan and set it aside.
Preparing the Bhuna Masala:
In the same pan, add more oil if needed. Add the sliced onions and sauté until they become translucent and slightly caramelized.
Add the minced garlic, ginger, and green chilies. Sauté for a few more minutes until the raw smell disappears.
Adding Spices:
Add cumin powder, coriander powder, garam masala, turmeric powder, red chili powder, and salt. Stir well and cook for a couple of minutes until the spices are fragrant.
Tomatoes and Beef:
Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the masala.
Cooking the Beef (Continued):
Add the cooked beef back to the pan and mix it well with the masala. Cook for a few minutes.
Bhuna Process:
Now comes the "bhuna" process. This involves slow-cooking the meat on low heat, stirring occasionally, until the beef is tender and the oil separates from the masala. This can take anywhere from 30 minutes to an hour, depending on the quality of the meat and your cooking method. You may need to add a little water occasionally to prevent burning, but keep it minimal.
Finishing Touch:
Once the beef is cooked to your satisfaction and the oil has separated, sprinkle garam masala and mix well. Cook for a few more minutes.
Garnish:
Garnish with fresh coriander leaves.
Serve:
Your Beef Kala Bhuna is ready to be served. It pairs well with steamed rice or flatbreads like naan or roti.
Enjoy your homemade Beef Kala Bhuna! Adjust the level of spiciness according to your taste.
