Mango Pancakes

Ingredients

Yellow Crepe
1 Cup Milk
¼ cup Cornstarch
⅓ Cup Flour
1 tbsp vegetable Oil
3 Eggs
2 tbsp sugar
5-6 Drops of Yellow Food Coloring

Whipped Cream
16 oz of Heavy Whipping Cream
1/2 -1 Cup of Powdered Sugar
1 tsp Salt
1 tsp Vanilla

2-3 Champagne Mangos

Instructions

For your crepe, blend all of your ingredients, making sure it is nice and smooth (the order doesn’t matter, just make sure it is blended)

Then strain your batter and set it aside

In a chilled bowl, add all of your ingredients to your whipped cream and stir/whip side to side until there are stiff peaks.

Once you are at soft peaks, stir in a circular motion to avoid your cream being grainy

Then place in the fridge to firm up

For your crepes, cook them on a nonstick 10-inch pan on medium heat

If your non-stick is good enough, you can just add it to your batter and cook it for around 45-60 seconds on one side

Then place it on a plate or anything that will absorb moisture and cool it down until room temperature

Once your crepes are ready and your whipped cream is chilled, cut your mangoes and peel them.

For assembling, add on your whipped cream, and one half of a mango on the rough, less better-looking side down. Then, fold it like a burrito gently and serve.
