Hop Sing was the Chinese cook for the Cartwrights. Hop Sing was played by Victor sen Yung, who played him very convincingly. Hop Sing and was quite a character and I believe an important ingredient in Bonanza. Hop Sing added comic relief when needed and was really quite lovable. He had a temper and had no problem expressing his feelings on the show, but the Cartwrights accepted him almost as a member of the family.
