The Winemakers Research Exchange (WRE) presents a virtual discussion of this experiment comparing different methods of measuring malic acid in juice and wine. The purpose was to determine the accuracy, precision, cost, and ease of use of enzymatic kits versus the Sentia wine analyzer in production wineries using samples that represent key points when malic acid might be an important determiner of wine operations.
