*Cinnamon*: 2 sticks (cut into small pieces)
*Cloves*: 2 spoons
*Black Pepper*: 2 spoons
*Star Anise (Chakraphool)*: 5 pieces
*Nutmeg*: ½ piece (broken)
*Black Cardamom*: 2 pieces
*Green Cardamom*: 6-7 pieces
*Bay Leaf*: 1 piece (cut into pieces)
*Kasoori Methi*: A handful (to be roasted)
*Amchoor Powder*: 1 spoon
*Black Salt (Sanchal)*: 1 spoon
*Regular Salt*: 1 spoon
*Kashmiri Red Chilli Powder*: 2 spoons
🥘 Method to Prepare Garam Masala
1. *Roasting Spices*:
Place a pan on low heat and add the cut cinnamon, cloves, black pepper, star anise, nutmeg, black cardamom, green cardamom, and bay leaf.
Roast the spices until they release a nice aroma.
2. *Cooling*:
Once roasted, turn off the gas and let the spices cool down.
3. *Roasting Kasoori Methi*:
In the same hot pan, roast some kasoori methi until fragrant.
4. *Grinding*:
Transfer the cooled roasted spices and kasoori methi to a mixer jar.
Add amchoor powder, black salt, regular salt, and Kashmiri red chilli powder.
Grind everything together until you achieve a fine powder.
5. *Storage*:
Store the garam masala in a clean, dry glass bottle. This masala can be stored for a whole year without losing its flavor or color.
