We have a few rainy days on the farm so we have been homemaking our next favorite thing! We have been rained out of the garden but the home is cozy and so we have been playing in the kitchen making sourdough bread, sourdough discard bagels, and donuts, homemade jelly filling and spruce tip syrup. The home smells amazing and I am inspired to pull-on my boots no matter the rain and head to the garden for some fresh flowers for the home. A cozy cup of ‪@FarmhouseTeas‬ is in order to warm up as I play with a new to me vintage vase. This is such a cozy video and it was in reality so cozy in the home, so I am happy to share it with you this week. I do hope it inspires you to get out no matter the weather and enjoy the what the garden has to offer.

sourdough Discard bagels
Ingredients
Refrigerated
• 1 Egg white
Baking & Spices
• 4 cups Bread flour
• 3 tbsp Granulated sugar
• 1 tsp Instant yeast
• 2 tsp Kosher salt
• 1 Toppings
Liquids
• 1 5/16 cups Water
Other
• 200 g Rams (about ¾ cup) sourdough discard (unfed, at room temperature)
In a large bowl mix together flour, yeast ,salt, and in a small bowl mix warm water 105 to 115 degrees and sourdough discard together, mix together and set in a well greased bole to rise about two hours. When about double in size punch down and let rest 10 min, then remove dough and and knead for about 2-3 min. cut into 8 parts and shape into bagels, let rest as you bring a deep pot of water to boil. boil for 1 min each side. Use egg white to wash the top and add your toppings be for baking at 425 degrees oven for about 18-20 min. let cool 5 min and enjoy.

Spruce Tip Syrup

2C fresh Spruce Tips
2C water
2C sugar
Boil water and sugar together till sugar is dissolved, turn off heat. Chop clean tips and add tips to sugar syrup and let cool over night. I added a touch of lemon to mine but you don't have to. Drizzled on top of fish or chicken for a fun flavor or use on pancakes.
