Ingredients For Bathua Dal recipe:
1 cup Soaked Urad Dal with Chilka
1 bunch Pigweed/Bathua
1/2 tbsp Salt
1/2 tsp Turmeric Powder
1 cup water
2 tsp Fresh coriander leaves
For Tadka:
1 tbsp Ghee
1 tsp Cumin Seeds
7-8 garlic cloves
2 whole Dry Red Chilli
1 tsp Asafoetida / Hing
1/2 tsp red chilli powder

Cooking Instructions
Step: 1
Wash, clean and chop bathua bhaji. Also wash black udad dal and soak for 30 minutes if time permits
Step: 2
Then put both in a cooker adding turmeric powder and salt. Add ghee and little water as this bathua will also release water. Take 3-4 whistles to cook properly until the dal and greens are cooked thoroughly.
Step: 3
Once the pressure releases, open the cooker and mash the dal saag to a creamy texture. Adjust the consistency if needed by adding water and simmering uncovered.
Step: 4
Heat ghee in a separate pan. Add cumin seeds, chopped garlic, dried red chillies, and asafoetida. Fry until aromatic and remove from heat. Pour the dal in the tadka and mix well to infuse flavors.
Step: 5
Adjust the consistency are per requirement by adding water. Cook uncovered for 4-5 minutes on low flame.

Finally now Garnish with fresh coriander leaves. Serve the hot Bathua Dal with rice or roti. Enjoy the wholesome Bathua Dal - a nourishing meal for lunch or dinner
