プルプル伝説到来。
札幌の新商業施設「ピヴォクロス」の7階に、椿サロンの新しい店舗がオープンして早1年。
行列嫌いの私は、やっとランチタイムを外して入城出来ました。
この店舗では、開放感が満ちあふれる吹き抜けの店内に優しい光が差し込み、高額グランドピアノが配置された優雅な空間が広がっています。

北海道ほっとけーきメロンの贅沢な味わい
代表メニューである「北海道ほっとけーき」は、その焼き上がりに20分程度を要します。外の景色を楽しみながらその待ち時間を過ごしました。

注文したのは「北海道ほっとけーきメロン」
ドリンクには椿コーヒーを選びました。
焼き上がりの少し前に、メロンがトッピングされたデザートとコーヒーが運ばれ、その後、焼きたてのほっとけーきズドンと提供されました。

メロンのトッピングは、北海道富良野産赤肉メロンが大きめにカットされて6切れてました。肉感からしてルピアレッド種と思われます。
北海道ミルクジェラートが中央に鎮座。
そしてその下には北海道ミルクゼリーが入っており、そこはかとない弾力感に笑みがこぼれます。
ほっとけーきの上にもメロンと北海道生クリームがトッピングされており、ほっとけーきは伝説通り、ぷるぷるとした食感です。
小麦粉、卵、てんさい糖、塩のみで作られ、一枚ずつ丁寧に焼き上げられています。無添加で寸止め無し。

北海道の自然素材にこだわった究極の美味しさを堪能できる逸品です。
窓から見える青空や都心の風景を眺めながら、贅沢なひとときを過ごすことができました。

椿サロンのテーマと歴史について
椿サロンは「満ち足りた時間をデザインする」をテーマに、札幌で誕生したカフェです。
自家焙煎珈琲と北海道の素材を使った無添加のほっとけーきが特徴です。
すでに15周年を経過しました。

店内の魅力
大通店舗の店内は、高い天井と天井までのガラス張りが印象的で、開放感に満ちて溢れています。
素晴らしい職人技の木彫りの熊や、一枚板の欅のテーブルがアクセントとなり、グランドピアノとも見事に調和しています。
札幌の中心部にありながら、大きな青空や降り注ぐ光を楽しめるこの空間で、リッチな気分に浸ることができます。

テーブルや椅子、照明、コーヒーカップ、カトラリーなどのオリジナルプロダクトが揃う店内で、日本文化に寄り添った安心安全で美味しい食を楽しむことができました。
店舗内装や設備、看板、ロゴはもちろん、周辺環境や立地条件などへの配慮をしながら建築空間や施設全体をデザインしていきます。
にしても、この設えと店舗デザインなど、ブランドとしての一貫性とそれぞれの機能を両立させることができています。

The Legend of Wobbly Pancakes Has Arrived.

It's been a year since Tsubaki Salon opened its new store on the 7th floor of the new commercial facility "Pivot Cross" in Sapporo. As someone who dislikes long lines, I finally managed to visit outside of lunch hours.

This store offers an elegant space filled with gentle light in an open, airy atrium, complete with a grand piano.

Luxurious Taste of Hokkaido Pancake Melon
The signature dish, "Hokkaido Pancake," takes about 20 minutes to prepare. We spent the waiting time enjoying the view outside.

I ordered the "Hokkaido Pancake Melon" and chose Tsubaki coffee as my drink. Just before the pancake was ready, the melon-topped dessert and coffee were served, followed by the freshly baked pancake.

The melon topping featured six large pieces of Hokkaido Furano red-flesh melon, likely the Lupia Red variety, given its meaty texture. At the center sat Hokkaido milk gelato, with Hokkaido milk jelly underneath, providing a subtle bounce that brought a smile to my face. The pancake itself was topped with melon and Hokkaido fresh cream, boasting the legendary wobbly texture. Made with only flour, eggs, beet sugar, and salt, each pancake is carefully crafted by hand, with no additives whatsoever.

This exquisite dish allows you to savor the ultimate deliciousness that comes from Hokkaido's natural ingredients. We enjoyed a luxurious time gazing at the blue sky and urban scenery through the windows.

About the Theme and History of Tsubaki Salon
Tsubaki Salon is a café born in Sapporo with the theme of "designing a fulfilled time." It features in-house roasted coffee and additive-free pancakes made from Hokkaido ingredients. It has already celebrated its 15th anniversary.

The Appeal of the Interior
The interior of the Odori store is impressive with its high ceilings and floor-to-ceiling glass walls, exuding a sense of openness. Beautifully crafted wooden bear carvings and a one-piece keyaki table serve as accents, harmonizing perfectly with the grand piano. Although located in the heart of Sapporo, this space allows you to enjoy the vast blue sky and sunlight, immersing yourself in a luxurious atmosphere.

The interior, filled with original products such as tables, chairs, lighting, coffee cups, and cutlery, offers a safe and delicious dining experience that embraces Japanese culture. This is a report of the noble time spent at "Tsubaki Salon Odori."

The design of the entire architectural space and facilities, considering the interior decor, equipment, signage, logo, and even the surrounding environment and location, is handled by none other than Hasegawa En, a leading figure in Hokkaido and Japan. Hasegawa is an interior designer and the CEO of Atelier Tenma. He also runs a café business, product business, and a design school through an NPO. Tsubaki Salon is the culmination of his dedication to Hokkaido's space, sound, cuisine, art, and people.
