METHI MATHRI RECIPE #methimathri Methi Mathri Recipe is a Crispy Punjabi Mathri bahut jyada Khasta Aate Ki Mathri , Ghar par banaiye Methi Mathri Recipe – bilkul Punjabi aur Gujarati style khasta mathri. Is mathri recipe in hindi mein aap seekhenge aate ki crispy mathri banane ka tarika, jo bilkul namak paare aur salted crackers jaisi lagti hai! Perfect tea-time snacks recipe – crunchy, tasty aur long shelf-life wali khasta methi mathri.

Preparation time - 20 minutes
Serving - 8

Ingredients (as added)
[00:38] 1 bunch Fresh Fenugreek (Methi)
[01:07] 1 tsp Ghee
[01:53] 1 cup Wheat Flour (Atta)
[02:02] 1/2 cup Semolina (Suji)
[02:14] 1 tsp Salt (or to taste)
[02:14] 1/2 tsp Red Chilli Powder
[02:14] 1/4 tsp Turmeric Powder (Haldi)
[02:19] 1/2 tsp Carom Seeds (Ajwain)
[02:24] 1 tsp Cumin Powder (Jeera Powder)
[02:24] 1 tsp Black Pepper Powder (Kali Mirchi)
[02:43] 2 tbsp Ghee (for shortening/moyan)
[04:12] Water (for kneading)
[06:13] Oil (for frying)

Method
[00:38] Clean, wash, and finely chop the fresh methi.
[01:07] Heat 1 tsp ghee in a pan.
[01:14] Add the chopped methi and sauté on low-medium flame until it softens.
[01:43] Turn off the gas and let the methi cool down completely.
[01:53] In a large bowl, add wheat flour.
[02:02] Add semolina (suji).
[02:08] Add all the dry spices: salt, red chilli powder, turmeric, carom seeds (crushed), cumin powder, and black pepper powder.
[02:33] Mix the dry ingredients well.
[02:43] Add 2 tbsp ghee for 'moyan' (shortening).
[02:55] Rub the ghee into the flour mixture until it is well incorporated and holds its shape.
[03:18] Add the cooled, sautéed methi to the flour.
[03:24] Mix the methi well into the dough.
[04:12] Add water little by little to knead a stiff dough.
[04:30] Cover the dough and let it rest for 5-6 minutes.
[04:44] Knead the dough again briefly.
[04:50] Pinch off small portions of the dough.
[05:02] Roll them into small balls.
[05:15] Press a dough ball flat and lightly roll it out to a medium thickness.
[05:41] Prick the rolled mathri with a fork so it doesn't puff up.
[06:13] Heat oil in a pan on medium-low heat.
[06:36] Gently place the mathris into the moderately hot oil.
[06:52] Fry on low-medium flame, flipping them occasionally.
[07:05] Fry until they turn golden brown and crispy.
[07:15] Remove the mathris from the oil and drain.
