Welcome back to week 3 of the pantry challenge--the month (or 2) that I avoid the grocery store and only cook from the food that I have stored at home. I am excited to share some desserts with you this week! Freshly milled coffee cake and oatmeal jam bars were enjoyed by all. Homemade Chick Fil A is a pleasure for the tongue and wallet. Creamy Sausage Rigatoni is a simple, but flavorful meal. Instant Pot Grape Jelly meatballs are my kids' favorite! I hope that these ideas bless your family. Thanks for watching!

FM Coffee Cake:
2 c soft white wheat flour (for me, this is 1 c + 2 Tbsp of soft white wheat berries into the mill)
1 Tbsp baking powder
1/2 tsp salt
*Mix those together
1 c milk
1 egg
1/2 c extra virgin olive oil
1/4 c honey
*Add to the dry ingredients and whisk--don't overmix
*Grease an 8x8 baking dish. Add the cake batter and prepare the topping.
1/2-3/4 c brown sugar
1 1/2 tsp cinnamon
Dash of nutmeg
3 Tbsp melted butter
*Combine all and spread over cake batter.
*Bake at 350 for about 30 minutes

Creamy Sausage Rigatoni
1 lb rigatoni pasta (I used penne)
1 lb Italian sausage (I used plain pork with some seasoning)
1 jar (24 oz) pasta sauce
1 block (8 oz) cream cheese, softened
*Cook pasta; sit aside. Cook sausage.
*Combine pasta sauce and cream cheese on low heat. Mix well.
*Add sausage and pasta. Stir until everything is evenly coated with the sauce.
