This is Method #9 of 10 of my Summer Steak Series, “the 10 Manliest Ways to Cook a Steak”. Like most people, I enjoy the modern trappings of cooking outdoors. However, in my military travels, sometimes you don’t have the space to carry even the smallest grill…enter grilling directly on coals.

There are plenty YouTube videos on grilling directly on coals but all of them omit the most important step in enhancing the experience: creating standoff between the steak and the coals.

This seemingly minor step is all that separates us from our uncivilized ancestors of thousands of years ago. Using 3-4 penciled sized hardwood sticks as a makeshift “grate” ensures you will have at least a decent sear and your steak doesn’t taste like ash. Don’t worry, you’re getting a primal experience because you’re still grilling on coals. But don’t take my word for it, try both ways for yourself.

BTW…whatever you do, don’t try this on charcoal briquettes because it’ll take about a week to get that taste out of your mouth; or so I have been told.
