My Whole Food Plant Based Party Dip is a crowd pleaser.

This Multi-Layer Bean Dip looks fancy (and beautiful 😍), but it's actually simple to make.

I'll show you exactly how to put it together in this video, step by step.

This recipe features roasted shredded sweet potatoes, taco-spiced quinoa, cumin and garlic black beans, salsa, guacamole, red onions, a homemade cashew-based Creamy Cilantro Lime Sauce, and is garnished with fresh cilantro.

A healthy appetizer made entirely of whole food plant-based ingredients, that's vegan, oil-free, and gluten-free, but SUPER flavorful? YES PLEASE!! 😋

It's always nice to have a healthier snack option at a get-together, don't you think?

This one is the perfect dish for a Super Bowl or "game day" party, award ceremony watch party, or any game night or move night with friends or family.

Multi-Layer Bean Dip

3 small sweet potatoes, shredded
Sea salt or Trader Joe's Chile Lime Seasoning, to taste
1 1/2 cups cooked quinoa
2 Tbsp taco seasoning
1 (15 oz) can of black beans, drained and rinsed
1/2 tsp cumin
1/2 tsp garlic powder
1/3 cup red salsa (or diced tomatoes)
1/3 cup guacamole (or diced avocado)
1/4 cup red onion, minced
Fresh jalapeño, sliced or minced, optional, to taste
Corn chips for dipping

For the Cilantro Lime Sauce

1/4 cup raw cashews, soaked to soften
1/2 cup fresh cilantro leaves
1 clove of garlic, minced
1 Tbsp nutritional yeast
1/2 tsp lime zest
3 Tbsp lime juice
2 to 4 Tbsp of water

Preheat the oven to 425 degrees F, and line a baking sheet with parchment.

1. Soak the cashews in hot water for at least 15 minutes, to soften.
2. Shred the sweet potatoes, either in a food processor with the shredding disc or with a grater. Spread them over a parchment-lined baking sheet. Season with sea salt of Chile Lime Seasoning. Roast for 20-25 minutes at 425 degrees F, flipping once with a spatula about half-way through the roasting time.
3. Cook the quinoa. Once cooked, sprinkle the taco seasoning in and stir to coat.
4. Open a can of black beans. Drain and rinse. Season with cumin and garlic powder. Stir to coat.
5. Blend the softened cashews (drained first), cilantro, garlic, nutritional yeast, lime zest, lime juice, and water in a small blender until smooth.
6. Spread the roasted sweet potatoes over a large plate or serving dish.
7. Layer the taco-spiced quinoa on top.
8. Add the cumin & garlic seasoned black beans.
9. Add the salsa.
10. Add the guacamole.
11. Add the minced red onion.
12. Drizzle the Cilantro Lime Sauce over top.
13. Garnish with more fresh cilantro and jalapeño, if using.
14. Serve with corn chips and enjoy!
