Fajita Chicken Bowl :
Marinate 1 lb chicken tenderloins with olive oil, paprika, garlic powder, onion powder, oregano, salt, and pepper. Sear the chicken, then cook sliced bell pepper and yellow onion in the same pan. Serve over instant rice with avocado.
Homemade Corn Dogs:
Mix 1½ cups flour, 2 tbsp sugar, ½ tsp salt, 2 tsp baking powder, and ¼ tsp instant yeast. Add ¾ cup milk and 2 eggs. Dip skewered hot dogs in the batter and fry in 375°F oil until golden.
Curry Chicken Tacos:
Season 2 chicken breasts with olive oil, salt, pepper, curry powder, and paprika. Sear the chicken, then simmer it in a sauce made from garlic, chicken stock, coconut milk, turmeric, curry powder, salt, and pepper. Shred the chicken and serve on tortillas with diced onions, tomatoes, and cilantro.
Shrimp Scampi:
Season 1 lb shrimp with olive oil, salt, pepper, paprika, garlic powder, and onion powder. Sauté the shrimp in butter, remove, then deglaze the pan with white wine. Add lemon juice, more butter, and toss the shrimp back in. Finish with parsley and lemon zest.
Peach Cobbler with Balsamic Glaze:
Slice 9–10 peaches and mix them with molasses, cinnamon, nutmeg, and potato starch. Combine 1 cup flour, 1½ tsp baking powder, 1 cup sugar, and 1 cup coconut milk to make the batter. Pour melted butter into a cast iron skillet, layer the batter and peaches, and bake at 375°F. Simmer balsamic vinegar with brown sugar for the glaze and serve with ice cream.
Butter Chicken Pizza:
Make the dough by mixing ½ cup warm water, 1½ tsp yeast, 2 tsp sugar, 1½ tbsp olive oil, ¾ tsp salt, and 2 cups flour. Knead and let it rise for 1 hour. For the sauce, sauté 1 tsp each of minced garlic, ginger, and Serrano chili in butter. Add cayenne, garam masala, cumin, cinnamon, tomato puree, tomato paste, coconut milk, and sugar. Simmer until thick. Season 2 chicken breasts with garlic powder, onion powder, ginger powder, cayenne, garam masala, and salt. Sear the chicken, dice, and set aside. Press the dough into a buttered skillet, spread the sauce, and top with the chicken, onion, and cilantro. Bake at 400°F for 15–20 minutes. After baking, brush the crust with melted butter and garnish with diced tomatoes and cilantro.
