BRITAIN'S BEST CHEESE ON TOAST - Crumbs Food

This recipe was voted Britain's Best Cheese on Toast. Perfect as the weather is getting colder as a lunch or with some salad for a midweek dinner. Try topping with eggs for brunch. Have you got a better recipe? Send suggestions & we'll give them a go!

Full recipe:
2 slices white bread
110g Wensleydale cheese
1/2 tsp English mustard
2 (or 3!) rashers of smoked streaky bacon
2 small spring onions

Place the cheese in a saucepan with the English mustard and cook over a low heat until melted. Toast two slices of bread and cook two rashers of smoked bacon under a grill. Finely slice the spring onions and chop the bacon into small squares. Once rendered, mix the sliced spring onions and the sliced bacon into the cheese and spread over the toast. Season (if you dare!) with black pepper.
