HOW TO MAKE SOUTH ASIAN METHOD OF FISH CUTLETS ( MIDDLE SPICEY FISH CROQUETTES). 🤩🤩🤩
மீன் கட்லெட் மிகவும் சுவையான இலங்கை முறையில்

INGREDIENTS:

14.2 oz or 400g Mackerel or tuna cooked or canned but drained and bones removed. (மீன் டின் )

250 g potatoes or 8.8 oz. (உறுளை கிழங்கு )

2 green chili chopped ( கறி மிளகாய் )

1 onion finely chopped ( வெங்காயம் )

5 garlic finely chopped ( உள்ளி )

1 teaspoon of salt or add until enough. (உப்பு )

1 teaspoon of curry powder (கறி தூள் )

1 teaspoon of turmeric powder ( மங்சள் தூள் )

1 teaspoon of ground cumin powder ( சின்னசீரகம் )

10 pieces of curry leaves ( கறி வேப்பிலை )

1 teaspoon of ground pepper powder (மிளகு தூள் )

2 egg extra-large or may need more (முட்டை )

2 cup of breads crumble or cornbread (பாண் தூள் அல்லது சோழன் மா )

METHOD OF MAKING:

STEP 1:

Clean the potatoes and place them in a saucepan and cover with water. Cook the potatoes until they are tender. Remove the potatoes from hot water and remove the skin when they are cool to handle.

Step 2:

Crush them with a fork ( doesn't have to be smooth, little chunks are okay) and set them aside.

Step 3:

With the fork, flake or break the fish into small pieces. Just like the potatoes, some chunks are okay, since they will get crushed when they are being cooked.

Step 4:

In a saucepan, heat 3 teaspoons of oil over medium heat.

Step 5:

Add the onions, garlic, green pepper, curry leaves and cook until onions become tender and translucent.

Step 6:

Add the potatoes, fish, curry powder, pepper powder, turmeric powder, cumin powder, and salt. And leave it for 10 minutes to cook.

Step 7:

Add the teaspoon lemon juice if you want.

Step 8:

When it is ready set the fish mix to cool down aside.

Step 9:

When it has cool down, take a spoonful of the mix and roll it into a smooth 2-inch diameter ball. Leave these balls on a plate.

Step 10:

In a ball, mix the two eggs, and on a separate plate, mix the breadcrumbs with the pepper powder and cumin powder.

Step 11:

Evenly coat each meatball with the egg mix and then coat them with the bread crumbs. Make sure to evenly coat the fish balls with the bread crumbs. Take care not to cause any cracks. If there is a crack you can re-dip in the egg wash and bread crumbs.

Step 12:

In a saucepan heat enough oil to deep fry the cutlets.

Step 13:

When the oil is hot enough, fry the cutlets until they turn dark brown about 10 minutes.

Step 14:

Place the fried cutlets on a paper plate to drain the excess oil.

Step 15:

Serve with tomato sauce or chill sauce as a snack.
