Black-eye Peas Recipe (Serves 4)

1 pound dried Dixie Lily Black-Eye peas, rinsed and sorted
1/2 white onion, diced
3 stalks celery, diced
1 bell pepper, diced
3 green onions, finely chopped
2 teaspoons garlic, minced
4 1/2 cups low sodium chicken broth
1/2 pound of smoked meat of choice (I used andouille sausage)
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/4 teaspoon black pepper
1 fresh bay leaf
1 sprig of fresh thyme
