Here’s a delicious Highway Style Mutton Koyla Karahi recipe that you can try at home. It’s perfect for special occasions like Eid. Let’s get cooking! 🍽️

Ingredients:

1 kg mutton mix boti

1 tsp salt (or to taste)

2 tbs ginger garlic (crushed)

3-4 cups water

1 tbs coriander seeds

1 tbs cumin seeds

13-15 black peppercorns

2 black cardamom

6-8 button red chillies

½ tbs Kashmiri red chilli powder

1 tsp turmeric powder

¾ cup cooking oil

2 large onions (sliced)

2 tbs ginger garlic (crushed)

2 tbs green chilli paste

500g tomatoes

4-5 green chillies

1-inch piece of ginger (julienne)

Charcoal for smoke

Directions:

In a wok, add mutton, salt, ginger garlic, and water. Bring it to a boil, cover, and cook on low flame until tender (about 30 minutes) until 1 cup of stock is left.

Dry roast coriander seeds, cumin seeds, cloves, black peppercorns, and black cardamom in a frying pan until fragrant (1-2 minutes).

Add button red chillies and dry roast for another 1-2 minutes. Let it cool.

Grind the roasted spices coarsely.

Mix in salt, red chilli powder, and turmeric powder to create the karahi spice mix.

In another wok, fry onions in cooking oil for 2-3 minutes.

Add crushed ginger garlic, green chilli paste, and cook for 1-2 minutes.

Add tomatoes, cover, and cook on low flame until soft (about 4-5 minutes). Then cook on high flame until oil separates.

Add the cooked mutton with stock, mix well, and cook for 2-3 minutes.

Add the prepared karahi spice mix, cook on high flame until oil separates (2-3 minutes).

Add green chillies and ginger.

Give it a coal smoke for 2 minutes.

Serve hot!
