Ingredients:

Beetroot – 200g
Sugar - 2 cups
Water – 5 cups
Cinnamon – 1 big piece
Nannari – 1 handful (Optional)
Lime juice – 1/4 cup

Steps:

Peel and slice beetroot.

Add nannari, cinnamon and sugar to 5 cups water and bring it to boil.
Once boiled, add beetroot and cook stirring often.
Let the solution reduce by ¾th

Switch off and drain the cooked beetroot into a colander.
Make sure that all the utensils used are dry. This is important for the long shelf life of the squash.
Let it cool. It further thickens on cooling.

Store in refrigerator.

To serve, add 1/3 glass of squash to water/soda. Top it with ice cubes. Enjoy your homemade squash!
