“Jom Masak” New York Bagels 纽约贝果

Utensil: Saladmaster 11” Square Griddle, 11” Skillet

Ingredients:
2 teaspoons active dry yeast
4 1/2 teaspoons castor sugar
1 1/4 cups warm water
3 1/2 cups bread flour or high gluten flour
1 1/2 teaspoons salt

Toppings:
1 egg, add in some sugar and beat lightly
Black and white sesame seeds
Poppy seeds
Raw oats

Method:
1. Pour 1/2 portion of the warm water in a bowl. Add in the sugar and yeast. Let it sit for 5 minutes. Then gently stir the mixture till the sugar is fully dissolved.
2. Mix in the flour and salt. Then add in the rest of the water. You can either hand knead the dough for around 10 minutes, or you can put the dough in the mixer and knead for 5-10 minutes till it’s smooth and elastic.
3. In the process of kneading, you may need to add an additional couple tablespoons of water. You want a moist and firm dough after you have mixed it.
4. Lightly grease a bowl with oil. Put the dough inside the bowl. Cover with a damp kitchen cloth. Let it rise in a warm place for 1 hour, until the dough has doubled in size. Punch the dough down, then let it rest for another 10 minutes.
5. Divide the dough to 8-9 pieces. Shape each piece into a round ball. Press it gently against the countertop by moving your hand and the ball in a circular motion. Pulling the dough into itself while reducing the pressure on top of the dough slightly until a perfect dough ball forms.
6. Coat the index finger or thumb with flour. Gently press the finger into the centre of the dough ball.
7. Take up the dough ball, then twirl the dough ball on your fingers and stretch the hole till it’s like a donut.
8. Place these dough on the lightly greased 11” square griddle. Cover with a damp kitchen towel and rest for 10 minutes. Meanwhile, preheat the oven to 220°C.
9. Fill the 11” skillet with water(half the skillet capacity), use medium high heat and bring the water to a boil. Use a slotted spoon to lower the bagels into the water. Once the bagels are in, they should float to the top. Let them boil for 1 minute, and then flip them over to boil for another minute. For a typical New York style bagel, meaning more chewy in texture, you can boil them slightly longer-2 minutes on each side.
10. If you want to add toppings to your bagels, do so as you take them out of the water. Brush the bagels with an egg wash, then coat the bagels with black and white sesames/oats or poppy seeds.
11. Transfer the bagels to the 11” square griddle and bake them in the oven for 20-25 minutes or until they are golden in colour.
12. Once the bagels are cooled down, you can sandwich the bagel with cream cheese, softened butter, fried egg, tomatoes, lettuce….
