Little Millet Idli & Dosa - Samai Idli & Dosa

Little Millet (Panicum miliare), one of the small millets, is called kutki in Hindi, sava (Marathi), gajro (Gujrati), same (Kannada), samai (Tamil), and samalu (Telugu). It is high in minerals like iron, magnesium, phosphorous and potassium. It is a smart carbohydrate with lots of fiber and low simple sugars. Little millet is a good source of protein for vegetarians.

Millets are a gluten-free, nutritious, rich in fiber and highly digestible grain that is both healthy and easy to prepare. Millets are considered as one of the least allergenic foods available today. Millets are also considered as superfoods because it is additionally rich in Vitamin B, Protein, Potassium, Iron, Magnesium and Phosphorus. There are number of varieties of millets and you can prepare many dishes from this most nutritious grain...

Ingredients:

little millet (saamai) - 2 cups [you can replace one cup millet
with one cup idly rice for more tastier idly..]
urad dhal - 1/2 cup
fenugreek seeds - 1/2 tsp
thick red poha - 1/2 cup
pink salt as required
