Diwali is incomplete without chakali. But this chakali should be prepared from bhajani. This chakali bhajani is well known in Maharashtra. Bhajani is prepared from different roasted lentils and pulses along with few spices. It is then ground into flour in a mill. You can easily get bhajani in store if you stay in Maharashtra but nothing beats homemade chakali bhanaji. Let’s learn to prepare chakali bhajani.

• Chakli at home - चकली बनवायचे साहिते
Ingredients:
• 1 cup Rice (Basamati tukada)
• 1/2 cup Chana dal
• 1 tbsp Urad dal
• Sabudana
• Thick pohe
• 1 tbsp Coriander seeds
Method:
• While preparing bhajani, wash all the pulses and rice well, dry
them and then use to prepare bhajani.
• But this is a time consuming process.
• To save time, take a wet cloth, put rice on it. Remove the
pesticides from it with the help of this wet cloth rubbing gently.
• In similar way I treat all my pulses to save time.
• Heat a pan on medium heat. Put the rice in it.
• Roast rice on medium heat for about 4-5 minutes. No need to
change its colour.
• Roast rice until it becomes light for about 4-5 minutes.
Remove rice into a dish.
• Clean the chana dal as we cleaned rice and put it in hot pan.
• Roast the dal on medium heat for about 6-7 minutes. Colour of
dal should not change.
• When chana dal is roasted for 6-7 minutes, remove it from the
pan.
• If you want to prepare the bhajani on larger scale, take 1 kg
rice, 1/2 kg chana dal, 125 gm urad dal, 100 gm pohe, 100 gm
sabudana and 1 tbsp coriander seeds.
• We can prepare chakali from homemade bhajani in two ways.
• By preparing ukad of bhajani. To prepare ukad, take bhajani in
a pot.
• Add some water in pressure cooker. Put another pot in the
cooker and put the pot containing bhajani over it.
• Close the cooker, remove the whistle and cook for 15 minutes.
You can do this using idly cooker too.
• After that add water and required spices to bhajani, do not add
any oil and make chakalis from it.
• In another method add all the spices to the bhajani. Add
boiling water.
• For 1 cup bhajani add 1/2 cup boiling water. Add 2 tsp oil to it.
• Take urad dal and clean it on wet cloth. Roast urad dal for 4-5
minutes. Remove the dal from the pan and add it to rice and
chana dal.
• Roast the sabudana for 4-5 minutes and pour it out on the rice
and dal mixture.
• Take pohe in the pan and roast for about 4-5 minutes. Pohe
should turn crispy. Pour pohe out into the mixture.
• Add coriander seeds to the pan, roast them for about 4-5
minutes. Pour coriander seeds out on the mixture.
• Mix all the roasted ingredients well. All these together will
weigh about 1/2 kg. Grind the bhajani in the mill.
• If you have coffee grinder or spice blender, add a few mixture
to it and blend into powder.
• After grinding on coffee blender sieve it.
• If you are giving the bhajani in mill for grinding ask the mill
man to grind the bhajani after another bhajani and not after
wheat.
• If wheat flour gets mixed with bhajani, chakali may not be
good.
