It’s a perfect example of the kind of high-flavor, low-effort dishes that I like to make. If you have leftover white rice in the fridge, you're already halfway done!

What kind of Vegan Kimchi is best for Kimchi Fried Rice?
If you’ve ever been to a Korean market, you know there are dozens of different types of Kimchi. The one thing you need to watch out for is the Kimchi itself, which can sometimes contain seafood products such as brine shrimp or fish sauce. If you’re buying your Kimchi, be sure to read the label carefully to ensure you end up with vegan-friendly Kimchi. Reason I chose Cosmos Kimchi because they are both Vegan and Organic! The ingredients are: Organic Green Cabbage, Organic Kale, Water, Organic Radish, Organic Carrot, Organic Cane Sugar, Organic Red Pepper, Organic Garlic, Sea Salt, Organic Ginger, Organic Onion.

1 cup Vegan Organic Kimchi 素泡菜
1/4 cup Kimchi Juice 泡菜汁
1 bowl Leftover White Rice 隔夜飯
1 tbsp Soy Sauce 醬油
Julienned Cucumber 黃瓜
