Here is a full comparison of the Spiral Mountain stage in Super Smash Bros. Ultimate vs. the original Spiral Mountain in Banjo-Kazooie! I also compared the background character's animations (Bottles, Mumbo Jumbo, Tooty, Gruntilda, Jinjos and Buzzbombs) to their original N64 animations - though some of the characters used animations from Nuts & Bolts so those were compared too.
