This is a super simple side salad. But wait, add some grilled chicken and you have a pleasing main course that is healthy and delicious. This is even better if you use vegetables fresh from your garden, Yummy! I might even add in tomatoes if you're feeling sassy.

Ingredients:
3-4 cups shredded zucchini approx 3-4 zucchini needed
1 cup crumbled feta
⅓ cup chopped kalamata olives
¼ cup minced or shredded red onion
½ cup chopped parsley
Dressing:
Zest of 1 lemon (optional)
2 tbsp lemon juice
¼ cup Extra Virgin olive Oil
¼ tsp dried dill
½ tsp salt
¼ tsp cracked black pepper
Optional ½ tsp red pepper flakes

Directions:
Shred your zucchini and onion if desired. Chop all other vegetables and place in a medium mixing bowl. Now place all dressing ingredients in a bullet or whisk by hand until it lightens in color and emulsifies. Pour dressing over veggies and stir to combine. Ready to enjoy or refrigerate and allow flavors to marry for 2-4 hours.
