Makes 36
Ingredients needed:
All Purpose Flour: 250g
Confectioner Sugar/ Icing Sugar: 92g
Egg Yolk: 1
Orange Zest: 1 Orange
Lemon Zest: 1 Lemon
Vanilla Paste: 3g
Butter: 175g

Instructions:
1) Prepare a hand mixer for creaming.

2) Sift the icing sugar. Once sifted add the butter and use the lowest speed on the hand mixer to cream. Slightly tilt the bowl towards you to prevent chunks flying everywhere.

3) Once its light yellow, add the egg yolk, orange and lemon zest, flour and vanilia paste. Mix until well combined.

4) Put the dough onto a cling wrap and chill until its firm enough to roll.

5) Place the dough on a baking paper for easy transfer to baking pan. Use a rolling pin or hands to flatten the dough until 1/4 inch thick. Cut the dough into a rectangle shape and trim the edges for a uniform shape.

6) Cut the dough into small rectangle pieces, do not lift the dough individually after its been cut into smaller pieces. Retrieve the scraps and form a dough and repeat step 5 and 6 until its used up.

7) Bake at 180C for 12 minutes or the edge is slightly golden brown. Leave it on the tray for a few minutes before transfer to a cooling rack.
