Ingredients

1–2 Whole Venison Backstrap (loin)

8oz Cream Cheese

8oz Baby Portabella Mushrooms chopped

1/2cup Crumbled Bacon (about 4 slices)

1 small Yellow Onion diced

Leave Bacon Drippings in pan. Cool with onions and mushrooms

½ cup Flat leaf Parsley chopped

2lbs Bacon

Liberally coat inside and outside of backstrap with whatever spices you prefer. I like to use smoky rubs, salts and peppers.
