Recipes:
Dough:
1 cup warm water (about 110F)
¼ cup sugar
4 tsp active dry yeast
2 cups white rice flour
1 cup brown rice flour
1 tbsp + 2 tsp xanthan gum
2 tsp baking soda
1 ¾ tsp salt
¼ cup melted butter
4 large eggs
Filling:
½ cup brown sugar
1 tbsp cinnamon
3 tbsp butter (room temperature)
Frosting:
¾ cup butter (1 ½ sticks) room temperature
4 ounces cream cheese (½ brick at room temperature)
Pinch of salt
2 tsp vanilla extract
2 cups powdered sugar
Instructions:
1. Add warm water, sugar, and yeast, mix and let bloom for 10 minutes.
2. In a large bowl, add all dry ingredients, melted butter, eggs, and bloomed yeast mixture. Mix very, very well
3. Add ½ cup water to dough, and mix very well again. Dough will be very sticky and appear too wet, this is normal.
4. Mix brown sugar and cinnamon for filling, set aside
5. Lay down plastic wrap, and cover with a dusting of white rice flour, add dough, sprinkle top of dough with more flour. Press dough into a rectangle about ¼ - 3/8 thick
6. Spread butter, then brown sugar and cinnamon filling over the surface evenly
7. Use plastic to roll dough up into log, cut into 8 even pieces, and place into prepared baking dish. Cover with plastic wrap, and let rise at room temperature for 1-2 hours, or until doubled in size
8. Mix all the ingredients for the frosting until well combined
9. Remove plastic, and bake at 350F for 20-25 minutes
10. Let cool for about 20 minutes, then frost and enjoy
