Matki Usal Marathi Style | Moth Beans | Beans Dry | Maharashtrian Style Matki Usal Recipe

2 cups sprouted matki/moth beans
2 medium onions chopped
3-4 garlic cloves crushed
3 tbsp raw peanuts
1 tsp turmeric
1 tbsp red chili powder
1 tbsp coriander powder
1 tbsp cumin powder
2 tsp garam masala
Salt as per taste
1 inch piece jaggery
1 ½ cups hot water
Coriander leaves for garnish
1 tsp mustard seeds
½ tsp asafetida
2 tbsp oil

Sprout the matki beans as per video posted earlier (link in description box).
Heat oil and add the mustard seeds, asafetida, garlic and saute for a few seconds.
Add the onion and saute until translucent.
Add the sprouted matki, raw peanuts and mix.
Add all the powders and salt. Mix.
Add the water and bring to a rolling boil.
Cover and cook on medium flame for 8-10 minutes.
Check for doneness.
Add the jaggery, mix, cover and cook 2-3 minutes more until the jaggery melts.
Garnish with fresh coriander leaves and serve hot.
