INGREDIENTS:
FOR BIRYANI MASALA:
Cumin seeds (जीरा) - 2 tbsp
Fennel seeds (सौंफ) - 1 tbsp
Coriander seeds (धनिया) - 2 tbsp
Dry red chili (लाल मिर्च) - 6
Black pepper (काली मिर्च) - 1 tbsp
Cinnamon (दाल चीनी) -3 inch
Green cardamom (हरी इलायची) - 5
Nutmeg (जायफल) - 1 inch
Bay leaf (तेज पत्ता) - 4 pieces
Mace (जावित्री) - 4
Black cardamom (बड़ी इलायची) - 4
Cloves (लौंग) - 4
Star anise (चक्र फूल) - 4
Kashmiri red chili powder (कश्मीरी लाल मिर्च) - 1 tbsp
Turmeric (हल्दी पाउडर) - some
Salt (नमक) - some

FOR RICE BOILING:
Rice (चावल) - 1 bowl
Salt (नमक) - some
Oil (तेल) - 1/2 tsp
Mace (जावित्री) - 1
Cinnamon (दाल चीनी) - 1
Green cardamom (हरी इलायची) - 1
Star anise (चक्र फूल) - 1

FOR PASTE/PUREE:
Onion (प्याज) - 2
Tomatoes (टमाटर) - 3
Green chili (हरी मिर्च) - 2
Ginger (अदरक) - 1 inch
Garlic (लहसुन) - 8 pieces

FOR BIRYANI:
Oil (तेल) - 2 tbsp
Biryani Masala (बिरयानी मसाला) - 3 tbsp
Garam Masala (गरम मसाला) - some
Red chili powder (लाल मिर्च पाउडर) - some
Cauliflower (फूल गोभी) - 1
Potato (आलू) - 1-2
Capsicum (शिमला मिर्च) - 1
Carrot (गाजर) - 1
Peas (मटर) - 1 cup
Cottage cheese (पनीर) - 200 grams
Water (पानी) - some
Curd (दही) - 1 cup
Ghee (घी) - 2 tbsp
Coriander leaves (धनिया पत्ती) - 1/4 cup
Saffron (केसर) - some
Mint leaves (पुदीना पत्ती) - 1/4 cup
Brown Onion (भुना हुआ प्याज) - 1 cup
Black Cumin seeds (शाहजीरा)

FOR RAITA:
Curd (दही)
Water (पानी)
Black Salt (काला नमक)
Sugar powder (चीनी पाउडर)
Bundi (बूंदी)
Mint leaves (पुदीना पत्ती)

RECIPE:
For Biryani Masala,take some Cumin Seeds,Fennel Seeds,Coriander Seeds,Whole Red Chilies,Black Pepper,Cinnamon,Small Cardamom,Nutmeg,Bay Leaves,Mace,Big Cardamom,Cloves & Star Anise then grind them.Put Kashmiri Red Chili Powder,Turmeric Powder & Salt then grind them again & the Biryani Masala will get ready.
For Raita,take some Whisked Curd,add Water,Black Salt,Powdered Sugar,some Boondi,Mint Leaves and give it a Tadka of Ghee & Black Cumin Seeds & the Boondi Raita will get ready.
For Biryani,take a pan,put some Oil,ground paste of Tomato,Onion,Green Chili,Ginger & Garlic in it.Cook them then put some Biryani Masala,Salt,Garam Masala,Red Chili Powder,chopped Cauliflower,Potato,Capsicum,Carrot & Peas.Cook the Vegetables,put fried Cottage Cheese Cubes,some Water,Biryani Masala and whisked Curd.Cook them for sometime.Boil some Rice by adding Oil,Salt,Mace,Cinnamon,Small Cardamom & Star Anise.
Keep a pot on the flame,grease it with Ghee/Oil,put the cooked Veggies,Boiled Rice,Roasted Onion,Coriander Leaves,some more Veggies,Rice,Saffron Milk,Coriander Leaves,Biryani Masala,Mint Leaves,Roasted Onion & give it a Tadka of Ghee & Black Cumin Seeds.
Cover it with Silver foil & keep a lid & a weight on it.Cook it on slow flame for 10-15 mins.
In this way,Veg Dum Biryani with Boondi Raita will get ready.
