Here I am showing how to properly sharpen a knife with Edge Pro Matrix stones, using a Spyderco Maxamet knife. The grit progression is designed for 10 strokes per side of a 3" knife per grit. If this holds true for Maxamet then it holds true for anything, period. This is my EDC beater and after shooting the video I see it had a few chips in the edge that didn't get totally removed, but still works for my needs.
