Grain/Sugars:

92.0% / 2.3kg Pilsner malt (Gladfields)
5.2% / 130gms Carahell (Bestmalz)
2.8% / 70gms Acidulated malt

Hops:

10.00 g Motueka (AA 7.5%, Pellet) 10 min, 6.9 IBU

10.00 g Nelson (AA 12.5%, Pellet) 10 min, 11.5 IBU

10.00 g Riwaka (AA 5.2%, Pellet) 10 min,
4.8 IBU

40gms each of Motueka, Nelson and Riwaka
(120gms total) for a 15 min 80C hopstand / whirlpool.

Note: Hop quantities are for a finished 10 litre batch, so adjust accordingly for your batch size.

Yeast/Misc:

Calcium Sulphate, 0.3 unit(s), Additive Added during mash
Novalager, 1.0 unit(s), Yeast
Whirfloc, 0.3 unit(s), Fining , boil 10 min

15C fermentation. Once you are a few points from final gravity, start increasing temperature gradually up to 21C and then holding there for 2-3 days for a diaceytl rest
