In today's video I'm joined by my good friend and fellow bartender Rachael to discuss how to make your own, original recipe cocktail.

Rachael's been behind creating Bomba Bar's winter cocktail menu this year and we thought it would be good to get her in and discuss how she came up with her brand new and delicious drink, The Patsy Collins.

How to make The Patsy Collins:

This drink is stirred in a tall glass, so no need for shaker tins. You'll only need a jigger, a bar spoon and of course, a tall glass.

Ingredients:
45 mls (1 & 1/2 oz) Fino Sherry
20 mls (2/3 oz) of Verjus
20 mls (2/3 oz) of Spiced Rhubarb Syrup* 
Ice
Soda Water
Dill to garnish

Add the Fino Sherry, Verjus and Rhubarb Syrup to your tall glass.
Fill with as much ice as possible.
Top with Soda Water.
Stir
Add more Ice or Soda if required.
Garnish with a healthy sprig of dill.

*Spiced Rhubarb Syrup Recipe:

Ingredients:
Chopped Rhubarb Stems
Sugar
Water
Pink Peppercorns
Cardamom Seeds

Method:
Mix rhubarb & sugar in equal parts with 1/2 part water.
Crush approx 3% volume peppercorns & 1% cardamom seeds to open them up and add to mixture. 
Stew over low heat until pureed, (approximately 2 hours). Cool, strain & bottle.
