Who knew beer belonged on curry? Well, Mark Dredge did and included a Lager Curry recipe in his cookbook "Cooking With Beer" which I am using in my video and have listed out his full recipe below.

This is only part 1 of a 3 part series where we will be making a Lager Curry with Lager Rice and Lager Chapati. And yes, they pair beautifully together.

Now, adding beer to curry isn't just about adding liquid, it is adding all the complexities that come from the brewing processes that you just can't have on hand at home in any other way. Think a subtle sweetness, a touch of bitterness to mellow out the other seasonings that would otherwise pop you in the mouth, and the alcohol helps to tenderize your meats. Plus, you get to use up random cans you may have lying around. It's honestly a win every way you look at it.

Ingredients 🍀
2 white onions
2 garlic cloves, finely chopped
1-2 red chili peppers, finely chopped
Fresh ginger, thumb sized, peeled and finely chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1/2 teaspoon cayenne pepper
1/2 teaspoon fennel seeds
1/2 teaspoon ground cardamom (or 6 whole pods, crushed)
1 cinnamon stick
6-8 chicken thighs, skinned, boned, and cubed (or an equivalent amount of diced vegetables for a vegetarian alternative)
4 fresh plum tomatoes, chopped
2 cups (500ml) lager
4 tablespoons natural yogurt
Fresh cilantro (coriander), to garnish
Salt and black pepper
Butter

Directions 📜
1. Sweat the onions in a saucepan for 5 minutes. Add the garlic, chili, and ginger, and stir for a couple of minutes.

2. Add all the spices and season with salt and black pepper. Allow the spices to cook into the onion mix for a few minutes, but be careful that the contents of the pan don't burn. Add the chicken thighs (or vegetables) and cook for 5-8 minutes.

3. Add the tomatoes, pour in the lager, and then simmer for 15-20 minutes.

4. Take off the heat. Remove the cinnamon stick and stir in the yogurt. Cover and leave the curry in the pan until you're ready to serve.
