When we harvest our carrots in the fall, we like to enjoy that sweet earthy taste all winter long. A trick we use is to layer them in sand in our root cellar to preserve their freshness! This method can also be used with other root vegetables and I have also added some tips to try even if you don't have a root cellar.
Our carrots grow in 3 (30 ft rows) and the yield has fed 5 people for most of the year...we rarely have to buy carrots. Carrots are very prolific, if cared for properly, and even if you have a smaller garden space, many carrots can be grown to feed your family too!
