spoiler alert, you don’t have to shop at a fancy bulk shop in order to reduce plastic waste! so let’s go grocery shopping at a regular ol’ supermarket (food lion) and see what kind of budget-friendly zero waste / low waste options we can find — HOPEFULLY it’s enough for a week’s worth of vegan meals?! then i’ll share my process for creating a menu plan to use everything we got!

◖ lemon vinaigrette recipe ◗
◦  4 tbsp lemon juice
◦  1 - 2 tsp dijon mustard
◦  8 tbsp olive oil
◦  s+p
◦  optional: ~1/2 tsp dried herbs or 1/2 tbsp fresh
add ingredients to a clean jar with a lid and shake until creamy and emulsified


◖ veggie pasta w/ white beans ◗
◦  1 pound pasta
◦  1 head broccoli, chopped into small florets
◦  1/2 cup reserved pasta water
◦  1 - 2 tbsp plant butter
◦  1 zucchini, sliced into half moons
◦  5 cloves garlic, minced
◦  1 -2 tbsp nutritional yeast
◦  1 can white beans, drained
◦  juice of a lemon
cook pasta in generously salted water according to package directions. 2 to 3 minutes before pasta is al dente, add the broccoli to the boiling water. drain pasta and broccoli, reserving some pasta water to thicken the sauce later. heat plant butter over medium high heat and saute the zucchini. to the pan, add garlic and any optional herbs, and cook for a minute longer. next add the nutritional yeast and some of the pasta water. bring to a simmer and stir frequently until the sauce has thickened, adding more pasta water and/or butter as necessary. add the beans and lemon juice, taste for seasoning, and add the drained pasta and broccoli to the sauce, stirring to coat. garnish with a squeeze of lemon and fresh herbs or green onion!
