Spaghetti All'Assassina is an amazing, relatively 'new' vegan pasta dish from Bari, Italy. It breaks all of the traditional pasta cooking rules and your taste buds will be singing with delight because of the range of textures achieved from the pasta.

Some bites will be perfectly al dente, some will be soft, some chewy and some charred and crispy. The tangy tomato sauce will absorb into the noodles and the fats from the crushed red pepper and garlic infused oil will cling to the outside of the noodles creating a delectably playful and unique eating experience for your friends and family.

This dish reminds me so much of Persian Crispy Rice, AKA Tahdig, I can't help but think there's some immigrant influence which caused this dish to become famous.

I served this to some friends who were vegan as a show-stopping main course for dinner the other night. There were no leftovers.
