Hello and welcome back to my kitchen!
This is a Middle-Eastern style baked rice and chicken which requires so little effort to make, and yet gives you big flavour! And the best part is, it only requires one-pot to make it, making it an easy week-night meal
Baked rice is really great because everything cooks so evenly without risking the burnt bottom. You can essentially throw your rice into the oven and forget about it for a while...
I serve mine with a yogurt salad, full of cucumber, tomato, lettuce and thinly sliced onions. Delicious!

Ingredients:
500g boneless chicken thigh (Breast dries out too easily for this recipe)
400g soaked and washed rice (Wash until water runs clear, aim to soak for 1 hour at least! This will give you fluffier rice)
3 TBSP plain yogurt (I used extra in the video because I had so much yogurt to use up!)
Salt and pepper to taste
1 bulb minced garlic
1 bulb whole garlic (my garlic is not too potent, use according to your taste!)
2 TSP ground Allspice
1 TSP cinnamon powder
3 TSP ground cumin
3 TSP sweet paprika
2 TSP smoked paprika
Juice from 1 lemon
Zest from 1 lemon
70g melted butter/ghee
150g Sliced tomatoes
100g green and black olives
1/4 TSP saffron (I used a small pinch because money...)
Toasted almonds, fresh parsley, sumac to serve.
