What is up friends, in this video I prepare Cochinita Pibil. Cochinita is a dish that originates in one of the 32 states that make up Mexico known as Yucatan. It is a slow roasted pork dish that is marinated and cooked in a lot of citrus and achiote paste. I made tacos out of the slow roasted pork, and topped it off with a quick pickle red onion and habanero mix for spice and sharpness to contrast the rich roasted pork.
